Lychee Cupcakes

Here’s an easy cupcake recipe which does not require a cake mixer. All you need is a mixing bowl, a scraper, an oven and all the ingredients. The end results…

Lychee Cupcakes

Crunchy on the inside


200g flour

2 tsp baking powder

1 1/2 tbsp milk powder

1 cup cornflakes (finely blended)

150g butter

100g castor sugar

1 egg

2 tsp vanilla essence

100g lychee (drained & cut into small pieces)

1 tbsp lychee juice


1. Preheat oven at 200 degress C.

2. Sift flour, baking powder and milk powder into a mixing bowl.

3. Stir in the finely blended cornflakes.

4. Add in butter and mix till it forms breadcrumbs.

5. Stir in castor sugar. Mix well.

6. Add in egg, vanilla essence, lychee juice and cubes.

7. Continue mixing until it forms a soft dough.

8. Scoop batter into cupcake liners.

8. Bake at 200 degress C for 20-30 minutes (depending on how big is your cupcake).

9. To finish it, dust cupcakes with some icing sugar.

    Thanks jo πŸ™‚ yeah, it’s something special to try out but I personally feel that the lychee taste isn’t strong enough.
